Fondo is what remains of what we have done and that disappears, without melancholy, in the turn of a fork.
In this story there are the Templars that have founded a village on the border between Val D’Orcia and Val di Chiana, that was a convent of the Olivetan monks, a hospice for pilgrims and a farm. And in this story, there are an art historian, Sabina de Gregori and a chef, Sara Scaramella who founded Fondo, a restaurant in the heart of Abbadia Sicille. There are local producers and farmers, there is a vegetable garden, the orchard and the bread that rise, there are soups, doughs, and embers. There is the table intended as a space to live, where food performs its function with honesty and with only one claim: to be simply good.
Whatever is the occasion to celebrate, we will work on it as a tailor on a dress. Fondo has large indoor and outdoor spaces: to your disposal, the main hall with fireplace, the lemon house overlooking the valley, the external courtyard with a well in it and the 13th century church.
